This spicy and creamy chipotle cream sauce is the perfect way to spice up a everyday foods, but especially Mexican and Tex-Mex dishes. Consider it a dip and a sauce – it works either way. Even better, our recipe has only three ingredients, so there is a good chance that you can make this with items you already have in your pantry.
More importantly of all, it tastes absolutely awesome. Perfect for dipping a flour tortilla or smattering on a big tasty burrito. Let’s begin.
The Recipe
All you’ll need is some sour cream, salt, and chipotle powder. That’s it. The ratio you use will determine how spicy it is.
*Feel free to use crema-style sour cream if you have it. Some would say it tastes even better that way!*
Typically I eyeball the ingredients and adjust for taste. But it’s easy to get carried away on the chipotle powder. A little goes a long way, so it’s usually best to measure it out.
Depending on the type of salt you use and your personal preference, you may want more or less salt. Sometimes it seems salty enough but you add a little more and it greatly improves the flavor. So experiment and see what you like best.
The Story
I came across this recipe entirely by accident.
There is a place nearby that sells burritos. Like Chipotle, but it’s local. And boy oh boy do people love this place.
It’s called Cabo Bob’s and it has several locations in the Austin Texas area.
They have many sauces, as well as their own selection of real sugar cane sodas. They serve made-to-order tortillas with four unique flavors that you can also mix and match. It’s pretty great.
One of their sauce options is chipotle crema, and I used to order several sides of it to pour on my burrito, bite by bite. It’s a spicy runny sauce.
But Cabo Bob’s suffers from inconsistent customer service, and forgets the extra sides more often than not. So I went into my lab to see what I could whip up.
What I created wasn’t as good as Cabo Bob’s. It was better.
And I can’t really run out – since I’m always well stocked on the three ingredients.
Prep time is measured in seconds, so buckle up and strap in – your taste buds are going to love this sauce which can range from mild to spicy depending on who much chipotle powder you use.
What to do with the Sour Cream Sweat
When you open your sour cream, you may see some watery substance at the top. Don’t pour it off! This is a vital part of your sour cream and it carries flavor. Gently stir the sour cream until the water blends back into the cream.

Description
This is the best sauce. Or dip. Or however you want to use it.
I love to put some on each bite of a burrito or a soft taco. Use it like a salsa. Or dip a tortilla in it. Or put it on some chicken and rice. It’s a great all-around spicy sauce.
Ingredients
1/3 Cup of Sour Cream
1/2 Tsp Salt (heaping)
1/4 Tsp Chipotle Powder
Instructions
Mix all ingredients and enjoy.
Notes
Don’t over do it on the chipotle powder! But if you do, dilute it by adding more sour cream.
You may need more salt to make the flavor really pop, so experiment with different levels.
Some sour cream is bland and some is more sour. I prefer the more sour kind – it has more flavor!
You can put leftovers in the fridge for a day or two. It’s basically just sour cream with regard to how long it will last.
